A month ago I wouldn't have attempted this, I have a lot of work to do on the horse. My question is this, when should I use a satin column or a fill stitch.

I think I would use satins on the horse's facial detail, except perhaps the eye, depending on stitch length (not over 7 mm). And I would use fills on the mane.
